Lettuce recipes?

We went from spring to summer in a matter of days, and I'm afraid the lettuce is going to bolt soon. Any suggestions for what to do with a boatload of lettuce besides salads?

1. Lettuce wraps! One of my favorite dishes at a Chinese restaurant.

I go vegan with diced tofu, bean sprouts, peanuts and not sure what else they put in. Diced chicken wraps is also on the menu. You can google recipes for lettuce wraps 🙂

3. Depends on what kind.

I've seen recipes for grilled romaine, grilled radicchio, grilled green and red lettuce. Lettuce soups, or you can use it in stir fry. If you have a juicer, juice the heck out of it all and freeze for use in soups throughout the year.

Sorry if it's ice berg. That's about the most generic bland tasting lettuce and pretty much only good for a wedge salad, in my opinion.

She wilted lettuce in butter and added frozen peas. When peas are warm it's ready.

you'll find many, many, even ones using iceberg! If you puree them, I bet you could freeze them.
