Turkey meatloaf with vegetables. It has grated zucchini, carrot, and onion in it. I'm also putting in Swiss chard or spinach, not sure which.
AKwannabe gave me the greatest idea for the dish I made last night: add pasta and chicken to the celery/olive/pickled peppers mixture. I tried it last night with the sausage and it was so good, actually better than the original recipe. If I don't get my meatloaves done (I'm doing a couple for freezing, too), I may have this, trying the chicken tonight. I love it when we can compare recipes and vary dishes based on the experience of other posters. Thanks AKwannabe!
Mint-ginger-pineapple tea.
Dessert: maybe a few blueberries with some no-sugar ice cream.

(19,175 posts)I lined the bottom of the broiler pan with foil, brushed it with olive oil, sliced a potato into cottage fries, laid them on the foil and seasoned them. I sliced the chicken breast and flattened it, brushed it with oil and laid it on the top of the broiler pan, seasoned it. I broiled it for 15 minutes, then baked it for 30. I really like the way the food turns out when I do this. The drippings from the chicken add some flavor to the potatoes. After prep, there isn't any fuss

(6,398 posts)I worked last night so had some chili at work. I brought some home and made it better with miso gochujang (sp?)
Umami and heat! Wasnt the best idea since I didnt get home till after midnight
but I was hungry again and that was that!
