What's for Dinner, Thurs., June 13. 2024

Cold plate with chicken thighs, sweet peppers, Vidalia, and baby carrots; peanut sauce dip.

Pita and bagel chips on the side.

Key lime kombucha.

This was easy. I've been gone all day and last night I stayed up until 4 a.m. making vegetable broth for soups using my home grown leeks, celery, herbs, etc., so I wasn't up for cooking a full meal. This cold plate approach fills the bill. I am freezing the vegetable broth in gallon size plastic bags and laying them flat on a cookie tin until they freeze.

I made a variety of things I can eat cold or heat in the microwave, hoping to keep the house cool when the weather heats up.

I had cut up veggies left from a potluck. I made a vegetarian stir fry. I made a cucumber salad. I made a mushroom souffle. I made some boneless bbq ribs and have some beans baking in the broth. I don't use recipes for food like this, but here are ingredient lists

Vegetarian stir fry:
Onions, broccoli, mushrooms, garlic, green pepper, olive oil, pepper, hot pepper, a little hot sauce, a little soy sauce.

Cucumber salad:
Cucumbers, sliced, green pepper strips, onion, garlic, vinegarette, olive oil, salt, pepper, pepper flakes

Mushroom souffle:
This is basically a bread stuffing with lots of eggs and cheese:
About 4 oz. mushrooms, washed, trimmed, sliced
Onions, chopped
3 eggs
3 slices of bread, chopped or crumbled
Shredded Mozzarella and pepper jack cheese, at least 1 cup
salt, pepper, basil, parsley, paprika, tumeric
a couple tablespoons butter, olive oil, or other oil
about 1/4 cup of water, more or less
Optional: Cheese for the top, and french-fried onions
Mix the ingredients, spread into a 9" pie plate, cover with foil. Bake at 325 for 35 minutues. If you want more cheese and the french-fried onions, put them on top, and let the souffle bake for 5 more minutes. It is fine to turn off the oven to let it finish.

Ribs:
Boneless country ribs
water to cover
garlic
onion
salt pepper
liquid smoke
hot sauce
soy sauce
molasses
honey
or prepared bbq sauce

In a large pan, mix the ingredients in the water, add the ribs. Bring to almost boiling, then drop the heat to low and simmer for 2 hours. When the ribs are tender, remove from the liquid and place on a broiler pan. Sauce them and put them under the broiler till they sizzle. Then flip add a little more sauce, and let them broil till they sizzle.

Sort dry beans, rinse and add to the broth from the ribs. Cook on the stove for an hour, then bake at 325 until they are tender. Add water if needed.

probably dark

I like the flavor it gives pork. I looked in local stores while I was out and didn't see any. I looked on Amazon and they can't deliver for 2+ weeks. Luckily, I don't eat ribs too often

We sailed into Salem harbor (where we bought Pelagic) after a 45 mile passage from Plymouth.

Local clam chowder. Thick and slightly oily.

Stuffed clams.

Green salad with tomatoes and onions.

Plum soup, on the other hand, is one of a family of East European cold fruit soups. I make it with overripe plums, cooked with some cinnamon sticks and lemon juice or sugar, depending on how sweet they are. After running it through a manual food mill, it's thinned with cream or sour cream or yogurt.
