What's for Dinner, Sat., June 15, 2024

Have to work this evening with the community gardeners, so I had an arugula salad with the white flowers in it. Sliced cucumber (mandolin), giant black olives, but best of all, queso cheese. I crumbled up a lot of it and was it ever good. Vinaigrette dressing.

When I come home tonight, I'm looking forward to a meatloaf sandwich on artisan bread. I cooked this meatloaf (turkey) in the slow cooker with vegetables--grated carrot, Vidalia, chopped kale and a little broccoli rabe. Yellow sweet pepper, corn. Panko bread crumbs and a few tablespoons of Muti tomato paste.

Cherry kombucha.

2. Chicken pot pie

There's a potluck picnic after church tomorrow, so today was a cooking marathon. I cooked a very large bone-in chicken breast in my Instant Pot. Some of the chicken was for tonight's pot pie, the rest was for chicken salad with cherries. Grapes in chicken salad is not uncommon, I thought why not cherries, since they're in season?

I also prepped the components of a spicy watermelon and pineapple salad, to assemble tomorrow. I had already cut up the watermelon, and had store-bought cut up pineapple. In my freezer I had yellow cupcakes, so I made a chocolate buttercream and frosted them.

I used a ready made crust for the pot pie. There are plenty of vegetables in the pie, but if we have room for dessert, there's leftover apricot-cherry crisp from yesterday.

My son just told me that Italy and Albania were playing soccer earlier. To taunt the Italians, the Albanians were taking fistfuls of spaghetti and breaking them in half

fried yellow squash and onions, salad with fresh corn, cucumbers diced tomatoes and purple onion tossed with olive oil, white wine vinegar and a little honey. . it was a farmer's market kind of day.

5. Baked Cod

Butter, lemon juice, and JO Seasoning.
Baked potato, broccoli with onions and tomatoes.

Got the 2lb bag of frozen cod at the store instead of my usual salmon. It’s been a nice change.

Still have choc chip cookies for dessert.

This evening, I finished the ribs and stir-fried vegetables, and had some beans. Had ice cream for dessert.

no longer does; used to be tuna with salad vegs which added good flavors. So had boring tuna sandwich instead.

Now, not great not local strawberries, and coffee ice cream.
