What's for Dinner, Wed., Oct. 23, 2024

Starting off with an antipasto plate--woven whole wheat crackers with rosemary. Topping with Genoa salami or pepperoni, red onion. Parmesan cheese cubes. Feta stuffed green olives.

Next up is rigatoni and broccoli rabe. Home grown garlic. Ciligene.

Blueberry-pineapple kombucha.

Dessert: Caramel apple dipped in chopped peanuts.

Ramen noodles with prepared jar Szechuan sauce. Spring rolls with chili sauce. Kimchi.

I’ll probably have a cup of soup at work after the rush is over. Hope it’s chicken tortilla.

sliced 2 medium reds, set them out on 'large' sheet covered w alum foil, drizzled olive oil, dusted with salt, garlic powder, thyme and paprika. In 425 degree oven for as long as it takes (so they're browned serving w rotisserie chix (about which I dreamed this moring!.) Hope to serve w hummus and sweet red pepper slices.

Ice Cream for desert later.

(IF smart, will make chix soup w remains, in a few days.)

4. Barbecued lentils

Lentils cooked with minced onions and garlic in tomato broth. The broth thickens as the lentils cook. Stir in Carolina style barbecue sauce when done. Use a half cup measuring cup to use a a mold to plate the lentils. Steamed asparagus with sliced mushrooms and air fried seasoned red potatoes are the sides.
Iced green tea. Dessert tonight is a delicious chia date pudding

We met a colleague and went to the Golden Unicorn for an early dinner. Our choices included:

Spring Rolls
Sesame Seed Rice Balls
Fried Shrimp Balls
Steamed Pork Shumai
Steamed Bok Choy
BBQ Spare Ribs
White Rice
Tea
Tsingtao Beer

Delicious.
