(3,324 posts)My wife injects our turkey with duck fat and apple cider and then cooks it via sous vide so it's fall-apart-in-your-mouth tender. Her family's stuffing recipe is beyond amazing and includes Mt. Sico (Newfoundland) savory. It's far, far better than my family's stuffing recipe.

(8,745 posts)I make a pretty good turkey. I follow Gordon Ramsays method and it makes a great bird. But I make a stuffing with chestnuts that I learned from my Mom and its awesome.
I don't have a sous vide but I am curious. How long does one sous vide a turkey? I gotta think it's about a day.

(3,324 posts)It'll depend a bit on the size of the bird and how you like your turkey.
You can get a sous vide cooker for around $100-$250 if you shop around or wait for a sale. The first one my wife used was the post-style one made by Anova, it's around that price point.
It's worth every penny. My brother-in-law splurged and ordered five of the real deal Kobe beef steaks a couple years ago and my wife used the sous vide machine. It was heavenly for all involved but for her, as a chef, it was a religious experience.

(1,915 posts)Fresh green beans cooked and seasoned are delicious. Nothing wrong with the green bean casserole, I eat that too, but it's unnecessary. Just fresh green beans cooked properly.

(10,911 posts)I make the simple kind - just boil cranberries with sugar. Since nobody eats much of it, I have plenty of leftovers to make cranberry muffins (use a recipe for blueberry muffins, substitute cranberries and omit the sugar, since there's already enough. Freeze in 1-2 portion quantities for the winter months)

(1,841 posts)Mashed sweet potato casserole with pecans and orange cranberry sauce. Its not Thanksgiving without those two classics (for us at least). BTW, I made mashed potatoes this year with baked Idaho potatoes (scooped out), not boiled Yukon Golds, and they were truly excellent. Love Thanksgiving foods.
