My mother was a Miracle Whip mother & I hated egg salad until I moved out & made my own with mayo. Then one year a friend gave me a couple of jars of spicy-sweet red pepper relish she'd made & it made the best egg salad I've ever had.

Do you add crunchy stuff or not? I like finely diced onion in mine but no celery.

Mayo, some freshly ground black pepper, some dried onion flakes.

On sourdough bread!

A bit of heaven . . .

Didn't think of crunchy stuff. Plus I don't have any!

In fact, the way the eggs fell into the bowl made me want to photograph them.

I just had the sandwich and a yogurt smoothie with it, for my lunch.
