Any Word (Office 365 subscription) experts here?

(MORNING UPDATE as noted in a reply below: Something weird did just happen. I created a new doc to test something - didn't open one of my templates. I didn't try to save it and instead clicked "close," and a dialogue box I hadn't seen before, 'cause I always use templates, popped up and suggested saving to the folder I always save to. So, me thinks it has something to do with using templates. Boo.)
I've Googled and can't find a resolution, though I have seen a few posts where people have said they're having the same problem. I'll describe my situation in lay terms as best I can...lol. I'm using Windows 10, btw, as that seems to be key.
I used Office 2003 until about four months ago. For my transcription work it performed well and I saw no need to fix what ain't broken. Unfortunately, as operating systems became so outdated that I couldn't continue that way, I bit the bullet and got Windows 10 and the Office 365 subscription.
I've been VERY pleased so far. Love the fact that I didn't have to have a separate app to print to PDF, that Word has that feature. Autocorrect has improved by leaps and bounds so that's awesome too.
One thing I don't like about 365 is how they try to force you to use OneDrive. I have no need for it and for security reasons won't use it (not HIPAA compliant without some workarounds) and prefer to save to the PC which I then back up daily. For example, it defaults to OneDrive when saving, and in the settings where you should be able to insert a preferred folder for saving, you can't change it from OneDrive.
I open a document template that I work from each day, and transcribe multiple notes in one document and I save that as each day's work. It's less labor intensive than opening the template each time and saving each note as a separate document.
About a week ago (nothing happened that I'm aware), I stopped being able to "save as." It would remain as the template I opened and worked from, I couldn't "save as" or "save" with a new name, and I had to exit, losing that work. After it happened a couple of times in one day I copied and pasted into a text document just to have it, even though formatting went to shit.
I'm now saving each note as a separate document which I don't like. Plus, I'm nervous even that's going to start messing up because I don't understand what caused me to be unable to save a document as I want. (I was unable to use the "save" function as of a couple of weeks ago; for 20+ years I would always save as I went along typing these long documents. But 365 would save it in weird places, not in my default preferred folder. So I did "save as" each time I wanted to save a document I was working on, and then it all went haywire.)
I hope this is coherent and gives enough info so that someone who knows Word might have a clue what is going on. Turns out I don't have Microsoft support beyond installation with my subscription, so I'm on my own. Although maybe I could get help via an alleged expert on Upwork or something.

(19,152 posts)crap, just noticed that here I am showing you how to set One Drive as default. You will choose a different folder! Mine WAS set like that and I chose Desktop as my default, as you can see.

(23,410 posts)I cannot figure out the rhyme or reason, but sometimes when I intentionally try to close without saving that dialog box will pop up. Otherwise with save or save as - using icons or keys - I dont get that dialogue box.

An edited previously saved document, clicking SAVE, yes, no dialog. But Save AS? YES!
You should get someone knowledgeable to connect to your PC and see. I am assuming it is WIndows.
