Arturo Rivera Martínez stood over an insanely hot grill Wednesday at his newly minted Michelin-starred establishmentthe first Mexican taco stand ever to get a coveted star from the French dining guideand did exactly the same thing hes been doing for 20 years: searing meat.
Though Michelin representatives came by Wednesday to present him with one of the companys heavy, full-sleeved, pristine white chefs jackets, he didnt put it on: In this tiny, 10-by-10-foot business, the heat makes the meat. And the heat is intense.
At Mexico Citys Tacos El Califa de León, in the scruffy-bohemian San Rafael neighborhood, there are only four things on the menu, all tacos, and all of which came from some area around a cows rib, loin, or fore shank.
The secret is the simplicity of our taco. It has only a tortilla, red or green sauce, and thats it. That, and the quality of the meat, said Rivera Martínez. Hes also probably the only proprietor of a Michelin-starred eatery who, when asked what beverage should accompany his food, answers I like a Coke.

Recently I had been thinking it's so odd that Mexican, and Tex-Mex food have been so wildly popular in the US and in Europe for so long, that it was a miracle it hadn't been treated with more respect.

The reader can watch the video or read the article, or do both. What could be better?
I just watched the video and being able to see and hear the man and the stand and customers adds something that you don't get in the text version.

I wonder if the 10' x 10' taco stand will be expanding any time soon? I would want to keep the simple, original, rustic atmosphere, of course but...
They'll have many more customers flocking to them now!
