I nailed it! Found a GREAT vegan pumpkin pancake recipe....see below

Did a few modifications to one we found on spark recipes - http://recipes.sparkpeople.com/recipe-detail.asp?recipe=139827

Here's what I did (smaller quantity, halved the recipe)

In a small bowl, combined 1/4 cup soy milk with 1 tsp lemon juice - let sit for 5 min.

To it I added 1/2 cup mashed cooked pumpkin, 1 cup water, 1 tbsp agave, 1 tsp vanilla - stirred well.

In a large bowl, whisked 1 1/4 cup whole wheat flour, 1 tbsp baking powder, 1/4 tsp baking soda, 2 tsp cinnamon, 1/2 tsp ginger, 1/4 tsp salt, 1/4 tsp nutmeg, 1/4 tsp cloves

Pour the liquid into the solid, mix quickly until just moistened - cook on a non-stick griddle (they are fragile!). Serve with real maple syrup.

We've always made a mean standard pumpkin pancake - these are their equal!

...last weekend for the first time, and I love it.

My non-vegan partner liked this better than standard french toast (which he loves). So he REALLY loved this.

I used a loaf of french bread (hate using store-bought sliced bread for french toast).

I used this guy's advice on cooking the french toast and it turned out really, really well:

Of course, I didn't use ingredients/batter from the youtube clip. I used the vegan recipe for that. Just used his cooking style to make really, really good french toast! The recipe and cooking style from the youtube clip are brilliant together.

I'll be looking to see if anybody posts any good pancake recipes!

We just do the Bisquick pancakes. I'm going to keep an eye on this one, though, because I'm eager to see something dee-lish.

2.5 C flour
2 T sugar
5 T baking powder (that sounds completely batshit, but it works and tastes fine)
A healthy pinch of salt -- maybe 1/3 t
3 C almond milk
Dash of vanilla
4 T oil

I make these at least once a week and they're always a hit.
