I made walnut "Parmesan" cheese today
Put it on some veggie pasta. It’s not cheese, but has it’s own flavor and I like it. Especially with the roasted tomatoes in my sauce.
I haven’t tackled vegan cheese yet. The disgusting mess that was my oat milk attempt is holding me back. What recipes do you guys like for different vegan cheese?

(4,179 posts)I usually buy vegan cheese at the Harris Teeter, in my town. They are kind of basic vegan versions of cheddar.
The walnut parmesan sounds interesting. I love walnuts and eat them often. Where did you find the recipe?

(1,600 posts)It’s been a tough transition for my family. I’m trying to make us “special occasion” meat eaters. But every meal that I make (our whole marriage) if it’s vegetarian, my hub says, “ it’s good but where is the meat?” 🙄
So anything I can do to make things seem “normal” like Mac n Cheese, is great!

(4,187 posts)Is hour husband against meat substitutes? Gardein is incredible, and if you look at the ingredients, it's also healthy. We normally eat Mediterranean-style foods from Donna Klein's "Mediterranean Vegan Kitchen" and Leah Leneman's "Vegan Cooking for One" (multiplying the ingredients by two), but occasionally we like having Gardein's fishless filets, crabless cakes, meatless meatballs, chick'n scallopini, or beefless ground.
