I took my first overnight trip. I had to carry a lot of equipment and liquid food. My anxiety left as we hit the road. Our host, Paula at Bobcat Hollow was wonderful. I told her what I could eat, but I wanted to make sure she shouldn't change dining plans for me.
Her house was beautiful.
While I was there I explored new foods, some I could eat, some I couldn't. While on the road I tried a real bad food, an egg McMuffin. I figured if I couldn't eat it, no big loss. I wolfed it down. It was virtually tasteless, but that was as I remembered it.
Oh yes, it was beautiful there.
So all in all, it was a good time for my recovery. The forest and the loving atmosphere there was good for my soul.

I hope your recovery continues positively, alfredo!
And thanks for sharing such wonderful photos! Is Bobcat Hollow in Tennessee or Texas?

(60,137 posts)The creek pictured is considered the cleanest in the state. It was full of minnows.

(21,646 posts)The owner paid cash for the place. She got her money waiting tables at a pancake restaurant. She was that good. Theres some savvy real estate deals thrown in to add to her larder.

(60,137 posts)I just made roasted vegetables sprinkled with a southern pepper sauce.

The olive oil enhances the heat. I used packaged peppers and one Jalapeño with a slit cut in it.

(19,188 posts)What kinds of peppers did you put in the mix? I wouldn't know from Adam, except I do know that jalapeno is hot!

(60,137 posts)I still can't handle real hot foods like I used to, but this is a start.
I think nature just makes us feel good. And friends! (and good food...so glad you're finding things to eat).
