My new Favorite Dinner: Sauteed Kale.

I tried a new recipe last night and it is SO Good and SO easy!

I just added a little olive oil to a wok let it get hot and added some chopped garlic. I let that cook about a minute and a half. Then I added some kale, about 2 cups(4 big stalks) and tossed it around in the olive oil to coat added some salt and pepper and cajun seasoning and stirred it constantly, when the oil was gone I poured in about 1/4 of a cup of water and covered it for a couple of minutes until it was wilted and really hot.

Then I put it in a big bowl topped it with some crushed almonds, crumbled bacon and parmesan cheese and a little hot sauce. OMG. SO GOOD.

You could use any seasoning/ topping you want with this. I don't think you could go wrong with this as a base for almost any flavoring. You could even add meat and put it over pasta. I'm going to do that next time: sliced pork with bow tie pasta.

I'll have to give this a try. I'm always looking for alternative veggie recipes for dinner and whatnot. Steamed broccoli gets old fast...
