Many meatloaf recipes do, but in my Mexican meatloaf I subbed ground up Fritos for that corn taste 😋

Just about the chorizo, taco seasoning, and Fritos.

And add taco seasoning, onions, and an egg.
When it is almost ready, I put some cheddar cheese on top and taco sauce. Serve with a salad and Mexican style pinto beans.
