Related: About this forumI got heavy ribs at the IGA on Wed
Put them on to slow cook at 8:30 this morning. They got tender already. I got them out of the broth, onto a broiler rack, and boil the broth down to a saucy consistency, used as the finishing coat. Early lunch Such a treat!
I don't measure, but I use molasses, salt, liquid smoke, hot sauce, garlic and some msg.
The ribs were 1.28/lb, probably locally sourced. Last time I bought some, they were either .78/lb or .98lb

(18,903 posts)The big bones, from a mature pig. I got enough in the pack for 4 meals. If I had 2 meals, or 1 meal, I'd regret my feast
In Ohio...often called Country Spare ribs/ pork

(18,903 posts)They are really meaty, and not much bone or fat. The heavy ribs I got have less meat, and the bones are 6-8" long, kind of graduate in size. I think you can Google images to see the different rib types. I hadn't heard these called heavy ribs until about 3 years ago. Meatcutters and stores are renaming some cuts to make them sell better. I like cottage ham. I was looking for one, and none of the stores sell it now. It used to be cheap. It didn't sell like butt ham did, so they used the shoulder for other meat products. My daughter found a meat store up north that sells small cottage hams for 8.99/lb. Crazy.

(18,903 posts)My Mom precooked them with spices in the house. My parents had a building they'd made over into 'the lodge' for parties and entertaining. Had a huge stone fireplace my Dad and his friends built. When Mom had them cooked, one of us kids would take a roaster full back to my dad and he'd finish them on an open fire. Usually several roasters full. So good
