My new favorite soup. My guys like it, too. I just made some.
Celery, carrots, minced garlic, cannellini beans, fresh spinach, basil, oregano, parsley, spaghetti sauce, ditalini pasta, and chicken broth. I like grated pecorino/Romano cheese on top.

I hate to spend too much on bowls since I occasionally break one but I dont want plastic, either. I thought he spent too much on them. Lol

I, too, love the dish. I've been looking for new soup bowls but haven't found any I like yet.
I guess I should get out the heavy black stoneware ones we have.
They have covers and are great to put in the oven to get the bowl warm, which keeps the soup hot during mealtime.

(34,535 posts)I occasionally break soup and salad bowls and dont like to spend a lot of $ on them but I surely dont want plastic bowls, either. My hubby sent away to Replacements.com for these and I thought he spent too much.

(113,130 posts)and I used cheap navy beans rather than expensive cannellini beans and I didn't spare the garlic. I found a Parmesan rind cooked with the beans did great things for the end result.
It was a cheap and hearty cold weather soup that I made even when I wasn't skint.

(34,535 posts)My grocery store carries organic cannellini beans $1.29/15 oz. can. Not too bad. I would think most any kind of beans would be delish. I will have to try your Parmesan rind idea.

(8,100 posts)after the soup is finished, as you are about to serve it, make a salad with a lot of bitter greens (escarole, arugula, etc) and then make a vinaigrette that is very heavy on the vinegar, mix the salad, put it into the piping hot soup. The soup will slightly cook the greens and the vinegar is delish in the soup.
