What's for Dinner, Sat., Febr. 4, 2023

Broccoli Cheddar soup. It's cream based, using half 'n half, and also has onion, carrot, garlic, chicken stock, bay leaf.

Small dinner salad with French dressing and for crunchiness, chow mein noodles on top. Scallions, cherry tomatoes, chopped green pepper.

Blueberry basil kombucha.

For dessert, white chocolate and a chocolate chip cookie.

1. Leftovers (and combinations of)

For my dinner I had some meatballs in marinara over a piece of whole wheat toast covered with melted mozzarella cheese.

I had a mug of decaf Red Rose Tea and two(!) almond flour oatmeal raisin cookies, a low sugar version. Tea and cookies used to be my regular after dinner go to, but my blood sugar got in the way.

Later on I plan to have salad with some added shredded roast chicken breast. Dressing will be a low sugar fat free ranch.

TJ is headed to work night shift tonight so I'm using up stuff in the refrigerator rather than preparing something new.

steamed broccoli

I didn't make dessert. We had no water for most of the day (like from 8:00 am to 4:30 pm).

I wish there were birthday cake left. Today would have been my mother's 89th birthday. (Miss you, Mom!)

Vegetarian because I used veggies stock. Tofu was really cheap, too.
I put cold shrimp marinated in lime juice & soy sauce, after it was boiled, on the side.

browned the meat in a skillet, then put it on a bed of potatoes, turnips, leeks, and carrots in the roasting pan. It's now in a slow oven for a few hours.

Lunches/dinners the rest of the week will be leftovers.
