What's for Dinner, Mon., Mar. 13, 2023

Salmon and roasted cherry tomato salad over ruffly red and green lettuce, spinach, and some iceburg for crispiness. Caesar dressing.

I roasted the tomatoes to the point that Mollie Katzen calls them "cherry tomato candy." They have such a concentrated tomato taste and they are very sweet.

Hardshell tacos.

Pomegranate kombucha.

Dessert: chocolate chip cookie, decaf.

Husband's feeling like he "needs" one.

With Morningstar Farms Chik'n Nuggets, lettuce and whatever else I can find in the fridge, and bleu cheese dressing. I'll probably garlic butter a couple of biscuits from the freezer and bake those, too.

3. Cheese ravioli in sauce

I sauted some frozen California medley vegs, with some fresh onion, garlic, and sliced kielbasa, and added some spaghetti sauce, poured over the ravioli, topped it with some Mozzarella and Parmesan cheese.

5. leftovers

I'm having some salmon cakes that I made from a can of salmon that we got from the food pantry. They were fairly tasty considering I had never made them before. Along side is leftover rice pilaf and beets

Al is opting for the leftover rigatoni w/ meat sauce.

Brownie for dessert


Dad had chicken patty sandwiches (w/ lettuce, pickles and American cheese)
