What's for Dinner, Sat., Mar. 18, 2023

Salad with roasted cherry tomatoes, red pepper, artichoke hearts, celery (from garden), red onion, shaved parmesan, and Caesar dressing with garlic croutons.

A friend brought me some giant shrimp, so I'm sauteeing two of them for the salad. If you saw these shrimps, you would not believe how big they are--each one yields about six bite-size pieces!

Sesame orange chicken. Couscous.

Vegetable bird's nests.

Dessert: banana milkshake, decaf coffee.

I had it the other day, made more today. Sauce was full of vegetables, some chicken breast, and topped with Provolone and Parmesan cheese. I made some quickie stuffed mushrooms, and sliced some cucumbers to go with dip. I let the cook have a glass of wine

With olives grown in Lebanon from the home of a restaurant owner who has opened near us. Tasty Zatoon. They also sell their own olive oil.

7. Grazing leftovers

There are meats such as chicken, corned beef, pickled herring, hot dogs with chili, & deli ham
Salad
Sugarless baked beans, stewed apple, & broccoli
Cabbage, tiny potatoes, & carrots that were cooked with the corned beef

Not really leftovers but under consideration for grazing:
Banana, strawberries, & apple
Yogurt
Cheeses

I can't decide which to begin with. I guess I'll figure out which oldest and use it up. A first world problem for sure. I'm thankful that I have so much food and am able to choose.

TJ will be working her usual weekend night shift at the medical center, so it is all up to me.

vegetable beef soup
grilled cheese w/ tomato and bacon


slice of pie for dessert (I didn't have any yesterday, but today I tried it and I think it came out pretty good. The texture was a little odd, but with frozen berries I didn't expect it to be like it would be with fresh.)
