What's for Dinner, Sun., Mar. 26, 2023

We had both a breakfast and a lunch buffet at our union meeting today, at which we had several hundred people in attendance. I had chicken francese and romaine salad with apples, dried cranberries, and walnuts. Earlier there was a big tray of scrambled eggs, one with sausages, bacon, and hash browns. There was a fruit buffet with about every kind of fruit you can imagine, from honeydew to mango.

Strawberry shortcake was the dessert.

If I get hungry later, I'm planning on a simple tossed green salad and a shrimp cocktail with spicy red sauce and lemon.

Miniature chocolate chip muffins with walnuts.

Tonight, we are having a Hot-Brown Sandwich. For those not familiar, it's an open-faced turkey sandwich with bacon, tomatoes hollandaise sauce and parmesan cheese, toasted under the broiler. We're having a spinach salad on the side and plum tart for dessert.

We have half of one boneless chicken breast, two Italian sausages and a very small beef filet. I'm going to grill them up.

We also have a couple of ears of corn. Usually, I like to shuck the corn, butter/salt/pepper the ears and wrap them in aluminum foil then cook on the grill; they get a nice charred edge and the butter soaks into the kernels nicely. Tonight I'm just going to leave the husks on and grill them as is.

I'm going to use up the rest of our salad fixings to make a mixed green pile o' stuff. I guess we'll be food shopping tomorrow.

Dark chocolate, red wine and a comedy movie for dessert.

Just sauteing some pepperoni and sliced baby bellas in olive oil first to flavor it. Served with angel hair and a tossed green salad with balsamic.

scalloped potatoes, roasted asparagus. Also made some individual brownies in ramekins.
