Orange bread :)



Ok so I had just made some banana bread earlier. Later on, fiance was looking skeptically at some Cara Cara oranges. I did not want them to go to waste, so I peeled them and put them in the food processor. Then into a sieve over a 1-quart measuring pitcher, squeezed all the juice out and put in fridge. Hmmm… what to do with all the pulp?

I adapted this banana bread recipe from allrecipes.com:

My recipe:

* 1 cup white sugar
* 1/4 cup butter
* Pulp from 4 oranges
* 2/3 cup sour cream
* 1 egg
* 1 Tbsp vegetable oil
* 1 Tbsp orange juice
* 1/4 tsp orange extract
* Zest from one orange
* 1 1/2 cups all-purpose flour
* 1 teaspoon baking soda
* 1/2 tsp ceylon cinnamon
* 1/8 teaspoon salt

Mix butter/sugar together till smooth. Add orange pulp, sour cream, egg, oil, juice, extract and orange zest. Mix till well-blended. Mix dry ingredients in separate bowl. Add to wet mixture gradually until just combined.

Pour into 9x5x3” pan; Bake at 325 degrees for 55-60 min. Cool in pan on wire rack 15 min, then remove from pan and cool completely.

I've done whole orange cake before - quarter a whole unpeeled orange, toss it in the food processor, and mix it in with the dry ingredients. I wonder if it would work with lemons - my tree is in the middle of its biennial "Oh Noes! I have to repopulate the planet with my lemon progeny" phases now, and I'm running out of neighbors to give them to!

Think u better try it!

I tried a whole orange cake before, can't remember where I got the recipe but I was underwhelmed. Kinda heavy / thick. This one turned out better, plus I got to drink some freshly squeezed OJ (it was pretty thick, I diluted it with some storebought OJ. Tasted like Orange Julius.)
