What's for Dinner, Fri., May 19, 2023

Creamy chicken & shrimp noodle soup; using udon noodles. Herbs like cilantro, chives, and dill over the top. This soup can be served hot or cold, but I'm serving it cold.

Corn muffin, from the ones I made yesterday.

Tossed salad with zucchini and goat cheese; chopped oregano over the top. Olive oil-lemon vinaigrette with peppercorns over the top.

Passion fruit-tangerine kombucha.

Maybe some mango and yogurt over a toasted waffle for dessert.

I've not had commercially made mashed cauliflower, I was surprised by how salty it tasted, I'll make my own next time.

We parboil them then finish on the grill. Half are seasoned with teriyaki sauce, the other half with salt, pepper and Old Bay seasoning. My wife made some macaroni salad to go with them.

Yes I know, this is a St. Patty's day meal. Well, I purchased corned beef just for that purpose, but my menu list just kept getting moved. So tonight, we're having out St. Patty's day dinner.

the Instant pot. Turned out fabulous. Made veggies in IP too. Easy meal with great rewards.

We’re anchored near Honeymoon Lake just south of Cape Canaveral heading back north.

Tomato salad with minced red onion, chopped basil leaves, a handful of peas topped with oil & balsamic vinegar.

Salmon filets sautéed in butter, white wine, capers and lemon. White rice on the side.

Pears marinated in brandy and “The Big Lebowski” for dessert.

I subbed today so my wife was going to cook. Then her back acted up, so we just pan cooked 80/20 burgers.
Fast, simple.
Got a particularly tasty beefsteak tomato, though.
