Greek chicken salad

I just made this up.

Mix together:

4 boneless skinless chicken breasts, cooked, cooled, and shredded

3/4 cup mayo

1/4 cup plain Greek yogurt

Juice of one lemon

One whole bunch of celery, chopped, including the leaves

3/4 cup of chopped cucumber

2 tsp. dried oregano

Salt and pepper to taste.

Not bad! 🙂

I find Chicken Salad tastes kinda gross when I first make it.

I bet ya some chopped up pistachios would be pretty money in that recipe

I thought about toasted sliced almonds, but I like your idea better!

This chicken is for later in the day so it will definitely be chilling for about 6 hours. I have bakery croissants to go with.

Got your grill all fired up today?

So probably not firing up the grill, though I suppose ... I should've thought of that!

LOVE chicken salad on a fresh croissant ... yum!
