What's for Dinner, Wed., May 31, 2023

I'm making a frittata: "Tuscan Chickpea Frittata." It's a mix from one of the RG's Italian import clients. It is low glycemic; one would think it would have eggs in it, but it doesn't.

To go on it, I'm using greens from the garden, like turnip and radish greens, broccoli microgreens, spinach,arugula, beet greens, and whatever else looks good. For that part I intend to use this new cookbook I got from the library called 366 Healthful Ways to Cook Leafy Greens. I'm going to thaw some shrimp to possibly put on top.

Maybe grated cheese.

This is a partial admission of failure on my turnips. Many of them have bolted and I doubt there is much of a root there. Really disappointed because I love turnips.

Dessert: mango mochi and Earl Grey tea.

small scoop of mashed potatoes, raw broccoli and cauliflower salad with bacon.

A bucket of coffee. I’m at work.

We’ve got doughnuts kicking around here somewhere for dessert. And there are supposedly lemon bars on site. I might go looking for them, only for the purpose of quality control, of course.

Filling: 1lb. ground chuck with salt, pepper and garlic, browned with most of the grease drained, then most of a can of refried beans and about 1/2 c. or so of salsa (Pace), mixed well and heated through. Should be pretty thick, not runny.

Will have with sharp cheddar cheese, chopped green onions, sliced black olives, chopped tomatoes (their labeled as mini marzanos, but I know they aren't authentic, but still good), red leaf lettuce, pickled jalapeno slices, sour cream, salsa and Frank's Red Hot.

Homemade guacamole with chopped tomatoes (same as above), chopped green onions, salt, pepper and garlic, fresh squeeze lime juice and Frank's Red Hot to taste.

Found these gigantic whole wheat tortillas at WinCo, much bigger than regular burrito-sized, so I'll stuff one really well and we'll split it. I originally picked these up 1.) because it's hard to find ww tortillas any larger than soft taco-sized anymore, and 2.) I used them for this recipe earlier in the week:

I've had it bookmarked for years and this was the first time I made them. It's a delicious and easy recipe for a home kitchen without having to shave meat from a large spit. I didn't have any oregano (because I don't like it), so I subbed a tiny pinch of dried thyme and a slightly larger pinch of dried basil. Got great reviews from B., so will definitely make again.

ETA: WinCo had fresh red cherries today for $3.98/lb., so I bought a big bag just for us to munch on.

I made some tzatziki for them, but could have easily gone with a tahini sauce if I hadn't been almost out of tahini.

I had to postpone making them on the day I originally planned because I missed the step in the recipe to bake the lamb ahead and refrigerate. It still sort of crumbled on the edges when I sliced it, but minor issue.

Wife has invoked summer rules. As little heat in kitchen as possible. Sliced tomatoes, boiled potato and a couple of radishes.

7. One pot dinner

It’s been a long day in the Georgia marshlands. Time for simple comfort food.

In a baking pan, I put boneless chicken thighs, cubed red potatoes, onion slices, and asparagus spears. Then covered it all with olive oil, rosemary, thyme, salt and pepper. Roasted at 350 for 45-50 minutes and it’s an easy dish for us tonight. Cookies and tea for dessert.

well, delivery actually.

Lunch today was leftover pho from a new place next door to where Mr. Retrograde and I volunteer on Tuesdays. As usual, it was much too much, so we took the leftovers home (we've started keeping containers in the car because we accumulated so many during the shutdown and we don't need any more). I discovered that rice noodles, if simmered slowly for about a half hour in broth, will totally dissolve and make a sort of porridge. Good, though, if a bit thick.
