Haven't been able to get buckwheat flour in a long time, even from the bulk foods section at WinCo. When I went there last week, it looked like there was some in the dispenser, but when I pulled the handle, it was actually empty...mostly. I pulled the handle probably 50 times and ended up with about 3/4c. Fortunately, that's exactly what I need for breakfast this morning. The gal at the checkout says that happens a lot; they'll get it in and within 2 weeks it's gone again.
Russia is the top buckwheat exporter in the world, and apparently the U.S., which is around third, can't seem to keep up with demand.
Sprouts has it occasionally, but it's an extra stop on an already busy trip for just a single item.

(22,767 posts)but I got by with it since it's mixed with AP flour anyway. We love buckwheat pancakes and waffles, but it's been very difficult to find in regular groceries since the beginning of the pandemic; and I'm certain Russia's aggression in Ukraine didn't help in the past year.
