What's for Dinner, Fri., June 9, 2023

Chicken and cucumber lettuce wraps with Almond Cashew Sauce. The sauce also has sesame oil, honey, and soy.

Along with the chicken cubes is couscous for the stuffing of the lettuce leaves.

Passion fruit-raspberry kombucha.

Dessert: fresh peach, nectarine, and strawberries with a lilttle Greek honey yogurt on top. Chopped mint.

Earl Grey tea.

1. Steaks.

I picked them up the other day and didn't get the right ones. These are chuck cross rib steaks. I've got them dry brining in the fridge as usual, but looks like I'm going to have to fire up the oven and do a reverse sear on them.

Serving with whole sweet potatoes and Brussels sprouts, I guess. Didn't pick up any asparagus, coz I wasn't planning on buying steak again so soon, and didn't think to go back for any. My biggest focus is the logistics of working my sore body through that HUGE store in a way that I'm not back tracking and adding extra steps. Did find a chair at the front to sit down and rest half way through this time, which helped immensely.

I'm guessing:
Pulled pork
Corn on cob
Garden salad (perhaps some chicken salad on top for a kick.
No sugar added Klondike bar

This is a killer dish from Weight Watchers cookbook.

If you want it vegetarian, sub chickpeas or black beans for the beef.

This will be leftovers for a couple more meals

9. embarrassed to say... canned ravioli

We are thankful to have been able to make use of local food pantries while we claw back from some rather expensive surprise bills. However, we are severely over-stocked with canned goods. We did a re-organization of our larder and and now have a better idea of our inventory. Now it's a matter of finding ways to use stuff up.

(I'm most worried about finding ways to use up canned fruit. I know I can make sauces from creamed soups, and I know I can add beans to recipes to stretch them.)

We did have a fresh salad w/ our ravioli.
