The refrigerator cleanout and the mini-meals continue. So far I've made the following:
Cold turkey vegetable soup. Veggies are carrots, lotsa' garlic, which I sliced and lightly browned, turnip, spring onion, with julienned Swiss chard, just picked from the garden. Found a quarter of a bag of frozen butternut squash, so I put that in, too. I had a turkey breast which had been roasted, so all I had to do with that is cut into pieces.
On top, either shredded Swiss cheese (shredded a little square of that--buh bye!) or pesto (small amount left in a jar).
For subsequent servings I'll change it up with chopped dill.
-------
Another item I made was sliced ham on wheat crackers with herb-flavored mayo.
I'll make a beet-feta cheese salad later on with toasted pecans and black-seeded simpson lettuce.
--Most people hate cleaning out the frig, but I'm trying to think in terms of the benefits: consolidating space. Like I combined two bottles of cornichons. Benefit: more space.
--Finding unusual ingredients with which I can be creative. Not sure what I'll do with this pickled lemon, but something will emerge. So creativity is the second benefit.
--You have to have lunch or dinner anyway, so why not use up what you've got? Benefit: less food waste.

Never grilled cod before. Was pretty straightforward. I was worried about the fish flaking when it got fully cooked, but that didn't happen.
My wife enjoyed it.
