Chicken pesto salad on tossed greens. I used a chicken breast from the deli since it's been too hot to cook here, although today is fairly nice with the high looking to be around 79 or 80.
The RG had quite a collection of interesting cheeses, so I cubed a few of them.
In the greens I put red and yellow pepper, scallions, garden celery, blue cheese stuffed olives, pepperoncini, radishes, and carrots.
For a topping, turkey bacon and croutons made from toasted ciabatta. I also added toasted walnuts since I didn't think the pesto had enough.
Caesar salad dressing, to which I added more black pepper and grated parmesan.
Pineapple-peach kombucha.
Watermelon for dessert.

(22,887 posts)The Landlady has her method of baking the pie in stages as she adds the toppings.
First, she warms up the dough on the pizza stone. Then comes the sauce and onion slices. Next come the other toppings, tonight they will be red and green pepper slices, sliced mushrooms and anchovy filets. Lastly, the mozzarella and Parmesan cheeses.
I'm making a salad of red leaf lettuce, red onion rings, sliced green olives, celery slices and pine nuts topped with Caesar dressing.
A nice Chianti to wash it down!
Italian cookies for dessert.
Sounds divine!

(4,332 posts)or does she buy already-made from the store? Every marinara sauce I've used is way too thin, and I haven't found a good prepared sauce. If she's found one, I'm sure all ears! Or, if she makes her own, I'm game to try if she'd share the recipe! Thanks!

(22,887 posts)She uses canned crushed tomatoes to make her sauces. Depending on the dish, she'll modify the sauce.
She doesn't like the pre-made sauces because there's too much sugar in them. Besides, she likes to play with her food!

Green salad from the garden. Wont be too many more of these because most of the lettuce is just about kaput.

(1,100 posts)With those wonderful farmstands. Our favorite is a honor system/cash box farm stand in a barn owned by an Old Order Mennonite family.
Tonight we are having tomatoes with basil and mozzarella, and garlic spaghetti with mushrooms, zucchini , and some great olive oil from Lebanon (local restaurant's owner has an olive grove at home).
Watermelon for dessert.
And a cantaloupe and local peaches for breakfast!

(22,887 posts)There's nothing tastier. There are numerous farms near us in Wayne County, PA and the farm stands are a treasure trove of great vegetables.
The local meat farms are superior, too. The beef, pork and chicken are exceptional.
Ain't nothin' like fresh food!
