Tomato-avocado sandwich on toasted ciabatta. Olive oil drizzled over the top, S & P.
Mango Pepsi to drink.
Later on, cold beet, goat cheese, toasted pecan salad using romaine.
Made sandwich from this Beefsteak tomato, which I picked last night. It is 2 lbs!

Eggplant parm with spaghetti and a Caesar salad.
I seem to remember my mother made eggplant parm, so it remains a favorite.

(37,868 posts)I use the beets in those sealed vacuum packs.
The RG became acquainted with the couple who own Love Beets when they exhibited at the Fancy Food Show about 15 years ago. The couple that started the company is from England. He started buying their vac packed beets, even though his roasted beets are spectacular. He still makes them now and then, cooking them in a high heat oven with the skin still on. We just scrub them vigorously and then brush with olive oil and roll them in sea salt.
I recently decided I wasn't going to deal with certain foods because I am lazy. Either that or extremely busy during garden season. There, that. Sounds better, LOL.
Those foods are:
--beets (don't want to mess with the stains, don't want to peel them).
--avocados. Can never catch them at the right stage of ripeness. Buy the package of about 10 sealed.
--peaches. Same as avocado. I use glass jarred.
--mango. Pain in the neck to peel, cut. I buy frozen mango.
