Best chili ever! Today is trash day, & the day I clean out my 'fridge & parishables.

I gathered everything and saw I had the making of some good chili.

Partial containers of Pico de Gallo Salsa and Salsa Cocida that needed to be used up.

Defrosted hamburger, a couple of tomatoes, bell pepper, and onion that have definitely seen better days and needed a bit of trimming. - diced pepper & onion sautéed in a bit of oil on high heat to get a little of that blackened fire roast taste.

I had a can of black beans, garbanzos, and a can of diced fire roasted jalapenos, and a pack of Chili seasoning (I stock up when things are on sale).

Anyway, I threw it together and am letting it slow cook for a couple of hours. I sampled it, and it's pretty darn good. I'll serve it with grated cheese, diced onions, sour cream, and the best tortilla chips ever (from the little Mexican market down the street). EDIT to add: I'll add a Masa slurry after it cooks down if it needs a little thickening. It gives it that little bit of corn taste.

Yesterday I made banana nut bread with over ripe bananas & chicken soup from a left over whole roasted chicken. yummm

This is how my Mom cooked - nothing went to waste - rice pudding, bread pudding, etc. She had too many mouths to feed.

just to make sure I can keep it another couple of days - for food safety.

If I make egg or chicken salads, I make sure everything is fresh. Salsas are another thing I want to be fresh. If they're a couple of days old, they go in a hot dish for a bit of a kick & flavor.
