What's for Dinner, Mon., Oct. 2, 2023

Crackers with eggplant/roasted red pepper spread.

Pizza with zucchini crust. Roasted tomatoes, accented with sundried tomatoes. Basil. Drizzle or two of olive oil.

Dessert: square of dark chocolate. cherry-almond filling. Decaf coffee.

pickled onion, radish and salsa verde. Baked pintos and cheese. Corn chips on the side. We're having tacos today because my kiddo works late on Tuesday evenings and will miss dinner at home...he made the request. Mama never says no when the child requests a particular dinner.

having grilled pork tenderloin sandwiches, potato chips with french onion dip. Small toss salad before bedtime.

Did you get a lot of rain last week? Still bone dry here.

We just returned from a camping trip last night, and after using a Coleman two-burner camp stove all week the kitchen seems luxurious!

It's been marinating since Saturday. Also steamed broccoli, rice, and kimchee (napa cabbage and white radish). Leftovers later in the week.

I'm just thrilled that I can get white radish kimchee at my Asian grocery store. Napa's good, but I love the radish.

Edited to say Pork! Pork! I don't even want to think about Port Bulgogi.

with homemade guacamole on the side, using the cherry tomatoes from the garden. Maybe a slice of the pineapple upside down cake I made this weekend for dessert, maybe not.
