What's for Dinner, Tues., Oct. 31, 2023

posting early due to working late.

Butternut squash soup and a BLT. Using turkey bacon, romaine, whole wheat skinny bread, mayo and garden tomatoes. I'm still getting quite a few as our tomato season in North Jersey has been late this year.

I like to put candied ginger pieces in my squash soups. A little different, but so good!

Dessert: caramel apple. Dark Chinese tea.

Enchiladas, tacos, hot rice.....I think Halloween candy for dessert, if there’s any left!

I’ve had to fast for a medical test and I’m starving!

When I get home to the mountain house, I’ll broil a filet, mash some potatoes and build a salad. Ponies and brandy for desert.

Can’t wait!

Yukon gold mashed potatoes and sautéed Chinese cabbage. Hmmm...and I think I'll pull out a few Chinese dumplings out of the freezer for an appetizer!

Taco time tonight.

I had four! Was so hungry after a long day of work and only tuna and crackers for lunch. And Belvita for breakfast. I definitely didn’t eat enough early in the day for how hard I worked. There’s leftover beer cheese soup I may also eat before bed.
