What's for Dinner, Mon., Nov. 6, 2023

Sure glad I have some of my sheet pan dinner from last night (chicken with Brussels sprouts, cranberries, toasted pecans, and sweet potato wedges) 'cuz I worked with 500 middle schoolers today from 7:45 a.m. until 3! No time to cook and I am ravenous.

We put woodchips on the paths and did cleanup, plus planted spring flowering bulbs like tulips and daffodils.

Ginger kombucha. Now the biggest treat for me will be to relax after my shower and find out what happened to The Liar in court today. I have Nicole on.

Ice cream bar for dessert (chocolate wafer/sandwich kind). Decaf Chinese tea.

I’m busy trying to use up what’s in the fridge ahead of vacation. So far, a salad and leftover veggie soup. Maybe a Turkey sandwich in a bit.

I like to have 500 middle schoolers helping me for a day or two. I would put them to work running the wood chipper and spreading wood chips in my hosta beds, spreading sheep manure on my garden, splitting and stacking firewood, etc etc etc. I still do all those things at age 72.5, but it gets harder every year. When I hit 70 it was like hitting a brick wall.

and have someone around to do the heavy lifting. She said she thought there were laws against that. Lol All in good fun. As long as I can do the work, I will. Chore time is getting shorter, breaks are getting longer

3. German tonight

A small salad to start made from the last of the lettuce and cherry tomatoes from our garden with thin slices of red onion and topped with a Balsamic vinaigrette.

Pan-fried weisswurst served with a coarse German mustard. Spatzle with a light butter sauce topped with caramelized onions and fresh parsley. Sauerkraut and Radeberger Pilsner beer.

German chocolate cake for dessert.

A feast for tonight!

Was going to make some "Tuna Helper" but I don't even feel like doing that.

I took a spill off of the bicycle on my way to Dad's. It really isn't too bad, but I'm sitting w/ an ice pack on it while Al deals w/ dinner.

cake for dessert

Dad had American Chop Suey and a garden salad (salad greens, bell pepper, carrots, cucumber, tomato and onion w/ ranch dressing).

I have finally figured out how to make a pot roast small enough for one person.

I may actually use half of this small piece of meat to make a beef barley soup.

beef, onion, garlic and Jamaican Jerk seasoning, tomatoes, and cubed sweet potatoes. When the potatoes are softened, throw in a big bunch of green beans and simmer until the beans are done.

The recipe recommends coconut rice with this dish and it is delicious but I did not want to bother with the rice.

I am going to take the leftover stew to our election location tomorrow for my workers to have for lunch.
