What's for Dinner, Tues., Election Day, Nov. 7, 2023

Green tomato pie. It's made using almond crust and sliced green tomatoes and shallots layered with goat cheese.

Simple to make if you buy a pre-made almond crust.

Spinach, orange, and red onion salad with citrus dressing.

Pineapple peach kombucha.

Dark Chinese tea. No dessert.

Baked ziti with a thick tomato and sausage sauce topped with mozzarella cheese. The salad will be an iceberg wedge with red onion, black olive slices, cherry tomato halves topped with blue cheese dressing and crumbled Roquefort cheese, (no bacon, alas!).

Dessert will be a Klondike Bar.

3. Slow baked spare ribs

They were on special at the little store butcher at 1.60 a pound I think. They cut them there, not vacuum packed.

I brined them with spices and a dash of apple cider vinegar overnight. Today I did a rub with chili powder, garlic powder, black pepper and salt. When they were almost done I gave them a coating of tomato based BBQ sauce and left the cover off..

Sides are organic sauerkraut from a jar (heated) and greenbeans.

No plans for a dessert.

It's like a breakfast skillet with hash browns.

All I know is it's definitely delicious and I have enough leftovers for tomorrow morning.

so didn't do any grocery shopping as usual. So dinner is a stir-fry of quick-pickled cabbage, onions, and Chinese sweet sausages over rice.
