What's for Dinner, Sun., Jan. 21, 2024

That salad I made from the Winter Salads thread yesterday was so fantastic but it was also a lot of work. Wore me out. So I think for tonight I will just have a bowl of chicken soup and change it up with some additional vegetables. So far it's just chicken soup with broth, carrots, celery, and onions, but I might add baby spinach leaves and some seasonings from the Ripert collection. It will be fun to choose: there are so many combos.

I posted about it at EatingWell, in case you want to look at my comment.

I thought another poster's comment about the two salad dressings being similar was a helpful observation that would cut down on the work.

I also mixed up some cornbread muffins, to which I added cheddar cheese and shishito peppers.

Maybe a salad if I get the ambition to make one.

Chopped spinach, ricotta cheese, onions, and garlic in a crescent roll braid. One of our regular dinners here.

Wife has Thai-themed soup simmering. Curry paste, butternut squash, coconut milk, onions, rice. Shrimp near the end.

Shredded smoked pork shoulder, cabbage, carrots, scallions, with chili oil and the usual seasonings with a poached egg on top.
Dessert is pineapple upside down cake.
