What's for Dinner, Mon., Mar. 4, 2024

I tore out some broccoli from a raised bed. I was amazed when I saw how much broccoli there was. I have a big bag of it. It's Waltham, which shoots off one fairly large head but then smaller heads for the rest of the year.

Since I have a roast chicken, I decided to make Chicken-Broccoli Soup with Cheddar for tonight. I already have some artisan rolls, which I will toast in the air fryer.

Kombucha: Ginger.

Dessert will be decaf and a 5-seeded almond bar from TJ's. I'm going to put a little mascarpone on the almond bar.

1. Vegetable Soup made with veggies I canned last summer

I canned 30 quarts of whole tomatoes last year and 28 pints of tomato basil soup
Grilled cheese made with spouted seeded bread and a mix of cheeses.
My son is here from Chicago and always requests this.
Peppermint mocha coffee.

We’re gonna fry some Lake Erie perch out on the patio. Hubby caught it last fall.
Homemade tartar sauce, corn muffins, and Cole slaw.
Ice cream for the guys for dessert.

3. Day 2 Slow-cooked Beef Stew - so you know it will be a bit better than Day 1, which was delicious, LOL!

(grass-fed/finished beef chunks will melt in your mouth and sooooo tasty with all the usual stew veggies. Monday is our Saturday! Unfortunately, it's way too warm for comforting wintery stew, a sunny 73 degrees but that's what got thawed yesterday...it will cool off and rain tomorrow -- so they say!

Sis put it in the crockpot before she went to the hospital. I cooked up some noodles for her when we got her home. She was kind enough to share it with us.

Some sauteed asparagus on the side.

9. Chickpea Dip

with fresh tortillas. Marinated the chickpeas in a little oil, lime juice, chili powder, cayenne, and salt. Roasted them and then ran them through the blender with a medium garlic clove, milk, and water to the right consistency. Made a hot oil with Cholula and chile flakes to drizzle on top. Yum!

Banana and strawberry smoothie with a touch of cinnamon for dessert. Still can’t believe it has taken me two decades of making smoothies to realize the bananas are better if you keep them in the freezer. The texture is divine, and I can keep a bunch of bananas in there without worrying about using them up quickly.

Tonight it was Brussels sprouts, roasted Roma tomatoes with Italian seasoning, and last but not least, fried clams.
