What's for Dinner, Mon., March 25, 2024

Shrimpburger from Whole Foods. All I have to do is dress it. I make a mayo-ginger, sesame mayonnaise for it and add shredded scallions and ruffly lettuce. Chopped cilantro.

Coleslaw with carrots, bits of pepper, and scallions. A few sweet potato fries.

Yeah, there is some prepared food there, but nothing too egregious, I hope. Gotta' take shortcuts during planting season.

Dessert: frozen raspberry bar. Dark Chinee tea.

Potatoes, onions, carrots and cabbage.
Had a deal on lamb shanks over St. Pat's. Had to postponed New England boiled dinner. Slow cooked the first one. Oven roast the second.

I had a small red potato and carrots, cukes and tomatoes. For dessert, I have strawberries and sugar-free white chocolate pudding with true whip. Have a great evening.

I thought this sounded interesting, so I looked it up. Did you fry the onions for the top? If you made it from a recipe, did it specify how many servings? Might try this sometime soon, so I'd like to know how many servings your recipe said it would make.

I would say well browned onions are a must, but they can be in the mix just as easily as on the top.

I use roughly equal quantities of dry rice, lentils, and pasta. One cup of each will yield you about six large servings.
