What's for Dinner, Thurs., March 28, 2024

Arugula salad with toasted walnuts and parmesan. Olive oil-lemon vinaigrette.

Chicken breast, sliced, over rice with spring vegetables like asparagus. baby artichokes and carrots.
It was kind of bland so I added a chicken sausage with sundried tomatoes.

Mixed cherry and ginger kombucha.

Strawberries and balsamic for dessert.

with mixed salad greens w/Mandarin oranges, cranberries, pecans, and cheese with choice of available bottled dressings from the fridge and with strawberry Greek yogurt fpr dessert with iced green tea for me or hot coffee for the chef.

Ergo, comfort food!

Yesterday, we landed at JFK at 2:15 pm and were through Customs, collected our luggage, got the car and drove into Manhattan where we parked. We were in the apartment before 4:00! A new record.

made a fresh veggie medley with carrots, broccoli, and zucchini. We had some fresh corn on the cob from Aldi which was very sweet and good. Dessert will be strawberries with whipped topping and three mini Cadbury chocolate eggs (three WW points). I drank water with dinner.

Indian lamb and spinach dish made with leftover lamb. Leftovers from this dish will be frozen in dinner-sized quantities for days when we don't feel like cooking.

Trader Joe's Indian-style vegetables as a side, and rice.

We had leftover everything from our meatloaf dinner the other night... so that's what we ate.

Honestly, it may have been the best meatloaf I have ever made.
