What's for Dinner, Wed.,. May 8, 2024

Appetizer: thinly sliced Cherry Belle radish over toasted 9-seed bread, topped with freshly ground black pepper, Whipped cream cheese spread on the toast.

Arugula salad with grape tomatoes and shaved parmesan. Homemade vinaigrette.

Main course is Eggplant Crisp with Walnut Streusel. Has toasted walnuts, cherry tomatoes, feta cheese, garlic, dill, parsley.

Kombucha: "Cosmic" Cranberry, a Brew Dr. flavor.

We’re having open faced sandwiches of a little cream cheese, fresh dill, cucumber slices and lox;
A cold soup of red lentils, carrots and onion, with a dollop of yogurt, maybe avocado slices.

nothing is jumping up and down demanding immediate consumption.

My minimum 2.5 cups/day vegetables and 4.0 oz meat/day quotas (min & max) described at

I had a couple bowls of beans late this afternoon as an early dinner -- the rest of my Instant Pot batch will be used for the bean gravy I put on just about everything -- potatoes, rice, pasta.

Maybe I'll just have pancakes later since I can't eat anything for breakfast tomorrow except maybe a slice of bread.

Veggies and meat - both tracked to measurements (cups for veggies, ounces for meat)

Fruit - I just write those down but don't endeavor to track ounces or any other measurment

Everything else foody - I just write those down

"Flat back time" - reading in bed and sleeping. Usually I read awhile before falling asleep or deciding to go to sleep, so I don't attempt to try to figure out how much of that is actually sleeping.

some morel mushrooms. Our son, the weeknight chef, sauteed them in butter with some green garlic (young garlic, used similarly to green onions, last Saturday's farmers market find) and added some fresh green beans that needed to be used. Main course was lamb chops and we also had mashed potatoes.

Another diet meal. Pork cut thin and pounded thinner, seasoned with salt, white pepper and paprika, oiled lightly and grilled on a ridged griddle that was as hot as I could make it, about 60 seconds a side. Also salad, carrots and steamed asparagus. The carrots had chives from the garden added, but there was so much extra chives, that I pretty much put them on everything.

It's been 5 weeks and DH is down 10 pounds. So he's on track. Since I'm not on the diet, I'm going out once weekly for some damned starch. Master Noodle is a favorite - he doesn't like it anyway, so he's not missing anything.
