I made some keto chocolate mousse. Easy ingredients cream cheese softened, cocoa, heavy whipping cream and a sweetener of your choice.
I made it a couple of times and it turned out beautifully. Fluffy and creamy. I didnt allow the cream cheese to get room temp and when all ingredients were mixed together I allowed it to be more marbled, in other words the chocolate wasnt fully incorporated.
A couple of weeks ago I made another batch and this time allowed the cream cheese to go to room temp. Added to stand mixer, whipped it up, added the heavy whipping cream, and chocolate, with a small amount of granulated sugar. Not sure what went wrong but it never whipped up and is extremely liquidity in its current state.
Do you think I could use it in a pound cake recipe?
I wanted to try it out the other day but chickened out because of being afraid it would be a flop and ingredients can be expensive.
Ive been making this pound cake
* 1 1/2 C Butter 3 sticks
* 2 1/2 C Sugar (I only use 2 C)
* 5 eggs
* 1 14 C Buttermilk (I make mine with vinegar and milk)
3 C Flour
3/4 C Cocoa Powder (I use Hershey Special Dark)
1 t Baking Powder
1 t Vanilla
Salt
Preheat Oven to 350🔥
Cream butter, sugar, eggs (1 at a time), vanilla
Add shifted dry ingredients alternating with the milk.
Add to greased and floured pan. Bake for about an hour.
* indicates room temperature for ingredients
Ive also been added spices as well 🤭

Im not on keto diet, but was looking for a quick recipe and this popped up. Its really good. I just kinda made up my own version. And in under 10 minutes I really liked that.
Im thinking that having the cream cheese at room temp perhaps played a role in the failure.
Ill definitely give it another go in the future.
