What's for Dinner, Thurs., July 4, 2024

Cold leafy green salad with ruffly red lettuce and baby spinach.

There are two parts to the salad, which I put on the plate with an ice cream scoop so it's a round ball.:
1. Shrimp salad with celery and Vidalia.
2. Egg salad with fresh garden peas.
In addition, I filled 4 sweet peppers with broccoli rabe and mozzarella. I put them in the third spot.

If this is enough, and at 88 degrees, it probably will be, I'll only have this for dinner. However, if I'm still hungry, I'll have a turkey burger.

Pomegranate kombucha.

Dessert: Yasso bar, coffee flavor.

2. Cheese steaks

We got some ribeye for half or less the usual price, because it was trimmings, about 1/4 inch thick. So I chopped and sauteed it, also some onion, green pepper and mushrooms, and we had that in buns, topped with provolone and broiled. So those might not have been authentic Philly cheese steaks, but for Independence Day, I said they were "Philadelphia Freedom" cheese steaks (our Millennial sons didn't get Mom's lame Boomer joke ) Also had cold green beans and chopped tomato in a basil vinaigrette, and tiramisu for dessert (instead of a birthday cake, it's my husband's birthday today).

They were married in 1969 when the only leave he could get (Army) was after basic training on a holiday. This was during the Vietnam war when both brothers enlisted to avoid the draft.
