We just did hot dogs, but while the coals were still hot I put peach halves, soaked them in bourbon, added cinnamon, and grilled the flat half.
Then, when I flipped them to the round side, I filled the stone hole with mascarpone & a pinch a brown sugar.
They came out fantastic!
Sweet, smoky, the sugar going to carmel & the creaminess of the cheese. Mmmmmm!

The only thing that took any time was using a peeler to remove the skin, and I did 4 peaches in under 5 minutes.
I forgot to add that I put a little vanilla bean paste in the mascarpone. Just slighted heated the cheese in the microwave (40 seconds, I think), put in a tiny bit of paste, and stirred it up.
Including the grilling, it was under 15 minutes of work, not counting letting the peach halves sit in the bourbon & brown sugar for about a half-hour.
Fast, easy, & delicious.

(71,536 posts)...mixing a tiny bit of vanilla bean paste into the cheese before I stuffed the peaches.
Was too important to the flavor to not correct the omission.
