What's for Dinner, Tues., July 9, 2024

Salmon, scallion, and cherry tomato salad over red tip ruffly lettuce. Also sliced cucumbers with tarragon sour cream/mascarpone dressing.

The greens will be tossed in light Caesar dressing.

Wheat crackers.

Pomegranate kombucha.

A little coffee/chocolate chip ice cream for dessert.

60/40 sour cream to mascarpone. I try to use as much of the watery part of the sour cream to get it to mix easily but if it's still too thick, I'll pour in a little half 'n half.

It is delicious!

I poached my salmon in tangerine, lemon, and bay leaf. Takes less than 10".

Ambrosia sweet corn on the cob. Later before bedtime a rootbeer float.

and dealing with all kinds of "business and money" stuff for hubs. I'm going to have some of my tomato soup and a grilled cheese sandwich (if I can keep that down), and be so thankful for the help you all gave me in straightening out the recipe. I didn't know I'd "need" the soup this quickly, but I'm sure grateful it's in individual containers, just waiting for me. The rest of the crew around here will be dining on leftovers - red rice and beans/hamburger/veggie cajun casserole I pulled together yesterday. There's enough for the two of them, along with a lemon icebox pie I made last night for dessert.

and had a drumstick it with some leftovers.

Had vanilla ice cream topped with peanut butter and mini chocolate chips.
