What's for Dinner, Thurs., July 11, 2024

Once again, really hot here. However, I made a very cooling test salad this morning from celery flowers, so I am going to make more for this evening. It's celery flowers, which are tiny white flowers, finely chopped stalk, Medjool dates from CA, and toasted walnuts. A bit of diluted Caesar salad dressing.

My main dish will be a cold vegetable plate with Mollie Katzen's Miso Walnut Sauce over the top. Blanched carrots, asparagus spears, sliced radishes and turnips, gold and red peppers, plus my first homegrown green pepper, which I was thrilled to pick last night. Also a few broccoli and cauliflower florets.

I might pick up some already cooked cold shrimp for an appetizer and to add a little protein to the meal.

To drink, cherry and key lime kombucha mixed together.

For dessert: honeydew melon. Iced tea.

We are just having Roast beef and swiss cheese french dip on toasted ciabatta with an au jus. Nothing too special, just easy peasy to prepare. And oh so yummy! Ijust love a crunch toasted bread dipped in the broth. Nummy.

3. I picked up a shift again

So will get a sandwich at work. It’s going to be a beef Philly or French dip so I can bring half home and have the giardinia I just made on it.

Had a large head of cauliflower I have been eating on. The end of it is a cool Italian relish currently marinating in seasonings and red wine vinegar and olive oil.

submarine sandwiches. Peaches & Cream corn on the cob and zucchini.

Later mixed nuts with chocolate.

5. Stuffed mushrooms roasted green beans

I had a thin heel of bread from the old loaf, crumbled it, mixed it with garlic, Mozzarella cheese, Parmesan cheese, spices, mayo and licquid smoke. I put a speck of fresh onion in the hole and filled it with the bread mix. Mixed the stems in with frozen green beans and some chopped sweet onion. I'll take the cover off and add some f.f. onions to the beans and finished them uncovered.

The baby bella musrooms were tasty.
