What's for Dinner, Fri., July 26, 2024

Posting early due to work.

Garden salad with Green Olive Dressing. The dressing has 10 pitted green olives, thyme, oregano, garlic and the usual S & P. From there it's just mixed greens with toasted pumpkin seeds over it.

Cold soup: Creamy Red Lentil & Cauliflower Soup. I'll be using my leek broth that I froze a few weeks ago. The seasonings are garlic, ginger, cumin, turmeric, and cayenne. Also calls for coconut milk.

Kombucha: Trilogy, raspberry, lemon, and ginger juice.

Dessert: cantaloupe.

We decided to sail up to the Bear Mountain Bridge on the Hudson River for an overnight anchorage. It’s a lovely sunset!

Filets of flounder stuffed with crab meat and bread crumbs. Covered in butter and herbs and fast baked. Served with lemon, tartar sauce and white rice. Steamed asparagus on the side.

Fresh peaches for dessert.

They are different colors on the bridge and at night they are reflected on the water, which you might even be seeing now! Greens, blue, reds.

I recall the first time I saw that huge expanse of a bridge. It was so impressive.

But seeing people picnicking on the side of Bear Mountain was not! There were so many people packed into such a small area and I recall thinking this is your idea of a picnic? That was a long, long time ago.

But back to the night lights: if you have Amazon Music, look up a song called "Night City Lights" by Bruno Bavota. It's also on youtube. It is the perfect music for looking at beautiful night lights.

(owned/managed by woman from Barcelona, so 'kind of' Italian,) followed by eggplant parmigiana (brought LOTS of it home,) and choc mousse for dessert later.
