What's for Dinner, Fri., Aug. 2, 2024

I've been gone all day for work (union), so no cooking for me tonight. I made up a big tossed green salad which was easy because I had already washed the greens: has celery, green olives, parmesan cheese, sliced cucumber, Vidalia, hard boiled egg, avocado slices, and green pepper. Caesar dressing. Croutons made with garlic and freshly ground black pepper.

Did you notice no tomatoes? Because I still don't have any, other than a few cherry tomatoes which I already consumed.

I went to Trader Joe's on the way home and found some interesting items. I've already tasted them but I'll have a little of each tonight. One is pizza crackers. Yes, they look just like little pizzas and taste that way, too!

This one will not last through the evening: mocha latte pretzels. Oh, yum!! The description says "mini pretzels with coffee candy coating and dark chocolatey drizzle.

Peach kombucha.

2. Peanut butter chicken and ramen noodles

I wasn't going to cook, but remembered I had a chicken breast to use. I haven't eaten much meat this week, so it tasted really good. I haven't had ramen noodles for years. I just use the noodles, not the packet.

I had some ice cream earlier

The cherry tomatoes are rocking but the five big plants are thriving without bearing fruit. It’s weird because we always have some by now.

We’re going to a birthday party in NY’s Tudor City so we don’t know the menu. Our friends are lovely hosts so I’m sure everyone will be happy.

Using canned clams...white wine, clam juice, basil, lemon zest, olive oil, garlic...of course, linguini....bread on the side....white wine to drink.

Ice cream sprinkled with walnuts before bedtime.

Like everyone else I have cherry tomatoes out the yazoo. We been getting some tomatoes 🍅 , but they have been taking forever to ripen. Our tomato plants are loaded and will probably ripen all at once.

for our gaming group: ground beef, bell peppers, Anaheim peppers, jalapenos, ancho chiles, guajillo chiles, onions, tomatoes, garlic, cumin, and other spices. Someone else brought corn bread.

And plenty of leftovers to freeze for later.

around here - or at least people with Mexican and Central American roots. Just about every grocery will have fresh jalapenos, Anaheims, pasillas, and serranos, as well as an assortment of dried chiles (which we keep on hand for when we're out of Trader Joe's enchilada sauce). We use the fresh ones to add bulk to the chili, as well as some heat, and the dried ones (after roasting and soaking) for color. Now that we have the Instant Pot, chili is a 24-hour production instead of a 3 day one!

Romaine lettuce, red onion, black olives, Parmesan, yellow bell pepper, grape tomatoes, mushrooms. Light Italian Dressing.

Just the thing on a sweltering summer night.

We were out for most of the day as well, so when we got home we decided to doctor-up a frozen pizza
