Thai Coconut Soup (Tom Kha Gai) I get to use my homegrown lemongrass (thanks for coaching, AKwannabee!), also chicken breasts, lime leaves, ginger, jalopeno, mushrooms, brown sugar, fish sauce, and lime juice. Also green onions and cilantro.
I'm making this is my slow cooker because I have no natural gas to fuel the stove in the kitchen. Found a gas leak and the gas company shut the kitchen part of the house off from fuel because of the risk of an explosion. I still have hot water, though, thanks to a genius plumber I lucked upon through a referral. The rest will be fixed next week.
It doesn't really bother me because there is so much you can do with an air fryer, microwave, etc.
Peach kombucha.

(15,195 posts)Bok choy on the side. It was my first time making scallion pancakes from scratch and they turned out okay, although Im sure my technique could improve.

(37,696 posts)Mine didn't come out so well. It was a long time ago and I have never made them again. I think I decided they were too much work.
TJ's has frozen scallion pancakes at a reasonable price. You do have to follow their heating directions carefully, though, or they don't come out like they should.

(15,195 posts)But thats a store I dont get to very often. Food Wishes has a very good video on how to do scallion pancakes and I followed those instructions. Not difficult and they reheat well.

(6,314 posts)I made mac n cheese the other day and a friend said they made mac cheese shepherds pie! I couldnt stop thinking about it so got 5lbs russets and the Macncheese shepherds pie is in the oven!
Peeled the whole bag and also made potato leek soup and curried potatoes and peas.
NJ we must be channeling because last time I made curry potatoes you recommended keeping naan in the freezer. It is there!
And will be ready to warm up when I eat the curry potatoes this weekend. Have plenty of all I have made for several meals.
Gonna take the bulk of the soup to the bar for sharing at happy hour with the peeps. They will be so surprised and the weather is perfect for it! Rainy Seattle today.

I made some chicken parmesan at home and brought it with me to my friend's house. Probably no dessert.
Hope the gas company surprises you with a quicker fix

The gas company is making me fix this all on my own because it's past the gas meter. Everything past that is my responsibility. It's pricey.
I considered buying new appliances and not fixing it, i.e., going electric. I think Biden put through some rebates that might have made it reasonable. Look at this, for example:
How Much Is the Electric Appliance Rebate?
Homeowners are eligible for an $840 rebate on the purchase of an electric or induction stove, cooktop, range or oven plus up to $500 to cover the costs of converting from natural gas to propane or electric.
For those who need to upgrade electric service, rebates include $2,500 for electric wiring and $4,000 for an electric load service center upgrade.
Anyway, something to consider.

It'd be nice if the govt. paid you not to replace gas appliances. I've only cooked with gas for short times. Most of the houses I lived in didn't have gas lines. I did like the experience.
In Oh. the water and gas co. won't cover cost from meter to house (bs!) They offer homeowner ins. to cover repair/replacement.

(37,696 posts)I'm almost afraid to tell the RG I'm considering a change to electric. I would get a long lecture; it might last for days.
I like cooking with it, too. It's fast, and I'm an impatient person. However, most of the time, in reality, I do slow cooking, like with slow cookers and putting things on low if I use the gas range.
I went to the web site of a good appliance chain around here to check out stoves and was actually shocked. They are barely selling new gas stoves at all.* I think the site said they only had 33 of them while they had hundreds of electrical stoves. It would be really nice to get a double oven and one with an air fryer. Unfortunately they are quite expensive, as in around $1700 minimum. Way more than the rebate covers. I would have to chip in a minimum of $400. But oh, would I love to have one. Drool drool.
You can get less expensive but I refuse to buy Samsung, LG, or any of those brands. Only American made for me. Might pay a little more but in terms of quality I'll get way more.
*I think this might be like what they are doing with leaf blowers. Phasing them out through attrition. For example, at Home Depot you can barely get a gas powered leaf blower and in the next year, I think, they are phasing them out completely.
