What's for Dinner, Tues., Sept. 3, 2024

Pork, cabbage.

Sauteed cabbage (fine chiffonade) and onions in my cast iron pan on the grill. Chopped fennel fronds and fennel seeds sprinkled in.

When it's cooked, I'll deglaze the pan with Calvados. To finish it up, a little cider vinegar and olive oil.

A few slices of pork roast given to me by a friend.

Pomegranate kombucha.

Dessert: "Hold the Cone" tips, which is a sorta' new product from Trader Joe's. They are about 2" long and are the tip of a waffle cone filled with dark chocolate.

Here are some other new items I tried from yesterday's trip to TJ's:

Lentil & rice "onion rings," sour cream and onion flavored. Only $1.99 and are they ever good. They're a baked snack, so fairly low in calories.

Oven dried red & yellow bell pepper crisps. They are terrific as a crunchy in salads. Also inexpensive--only $1.99, I think.

The local supermarket had some beautiful salmon filets that are marinating in milk. I'm planning to grill them skin-side down then serve with lemon and tartar sauce.

Since the grill will be fired up, I'm going to grill a couple of ears of corn in their husks then serve with butter and salt & pepper.

The Landlady is making a garden salad from her green house. Red leaf lettuce and cherry tomatoes then store-bought red onion rings and thin slices of green pepper topped with ranch dressing.

Ginger snap cookies and constant comment tea with a comedy movie.

We had the classic hamburger with seasoned french fries and small toss salad with honey mustard dressing on mine and ranch on Loretta's.

9. I went all out on dinner tonight...

I'll pay for all the standing I did tomorrow, no doubt! But it did turn out great, I'm pleased to say. I made Red Chili Enchiladas, and (just because my hubby loves them) I also did a pan of chicken green chili enchiladas, as well as a few straight cheese enchiladas. With my grandson now living with us, the leftovers *may* last thru tomorrow night (LOL). Also did a Mexican flavored rice, as well as refried beans (with my own spices added).

I've got my own recipe I think I may have found decades ago when living in Texas for the chicken enchiladas. After sauteing onions, jalapenos, and any other chilis I want to add into it, I dice the chicken very small and add it to the pot to heat up and infuse with the spices. Then I transfer all of it to a bowl, where I've whipped cream cheese into a very smooth texture and add in a couple of tablespoons of sour cream. Hubby ate one entire small pan, all by himself, this evening! Grandson ate four of each type! Luckily, I'd gone grocery shopping yesterday. It's nice having food in the pantry and the refrig for a change. The last couple of months have been hard, money-wise, while moving the kiddo in with us. Dang, it all turned out so good and looked so great in the pan, I wish I'd taken a picture to share! (LOL)

10. Korean beef Bahn Mi

Went to a Korean spa/bath house with a friend. It has a restaurant. Ended the afternoon of detox and relax there.

They served some munchies to start. Kimchi broccoli with a sauce Korean slaw and a pancake I didn’t care for. They also served the sammie with pop chips and a siracha mayo. (My friend had soft tofu soup).
I had coconut water as needed the hydration.

Edit to add: they were selling water infused with organic fruits for $19.50. I choked!!
The Vita coca water was $5. Like paying concert pricing for drinks! lol. I used the fountain otherwise and when I go back for my half off birthday day pass I’ll infuse my own water.
