What's for Dinner, Thurs., Sept. 19, 2024

I understand the weather is going to be cooler, so I thought I'd start some soup, specifically squash soup since I have some from the garden. I found this easy soup recipe which offers great versatility with the toppings. Just cook the squash with an onion in chicken broth, puree it, and add S & P. The cookbook author has a list of toppings or additions to choose from so you can customize to whatever you're in the mood for or whatever you have on hand.

I'm choosing a swirl of pomegranate molasses and roasted pumpkin seeds and cashews.

I'm using one of my orange kabocha squashes, which I grew for the first time this summer:



Others in the pic are acorn squash.

The cookbook I found this in is called The Everyday Squash Cook by Rob Firing. It's a digital checkout from my public library.

If I get this soup finished tonight, I'll add a grilled cheddar bratwurst to the meal. If not I'll have a leftover of some sort.

Pineapple ginger kombucha.

my grandson is getting married next weekend in Chicago so I want to make sure the dress I bought in July still zips up easily. it will also be a 3 day eating binge .

Chopped Salad
Iceberg, salami, white beans, fontina cheese, pepperoncini, roasted red peppers, olives, tomatoes, cucumber and homemade Italian dressing

Penne D' Napoli
Mild sausage, roasted peppers, marinara sauce and penne

Garlic bread.

If I Iike it, may try this to eat in, on way home from NJ birthday w grand daughter, in couple weeks.

Cioppino
Mussels, shrimp, clams, calamari, salmon, tomato broth or white wine and linguine (Likely choice tomato both, instead of white wine; will advise!

since it's Mr. Retrograde's birthday. It's sort of a leftovers cake - I pureed some elderly pears and threw in some chopped candied ginger to my go-to NYT lemon pound cake recipe. So far, it smells good.

The rest of dinner: pork chops, scalloped potatoes, and braised cabbage.
