A pound of hamburger and the pantry/fridge today

Ended up with three different meals.

Chili with lentils
Chili mac
Cabbage and hamburger hobo foil packets

Along with the hamburger, I had a small cabbage head that I needed to use from the fridge as well as a small onion.

From the pantry, I used brown lentils, macaroni, chicken bouillon cube, fire roasted Ro-tel tomatoes and fire roasted crushed tomatoes, fresh garlic, whole dried Mexican chili, chili powder, onion powder and ground cumin.

I built the chili first. No beans. Once it was to my liking, I dipped out about half of it to use in chili Mac. Then after rinsing and soaking the lentils for a bit. I added more water to the remaining chili and cooked the lentils in the chili which is making it rather thick and sumptuous!!

The cabbage was sliced about half inch thick slices and put on large sheets of aluminum foil. Topped with hamburger patty, sliced garlic cloves and topped with a couple table spoons of the crushed tomatoes (the rest was already in the chili simmering). Salt and pepper to season and that’s it. In the oven at 375 for 45 minutes.


Pretty happy with the three meals I made. Probably yield three servings of each meal. More than enough to share. Having chili mac for lunch and will dig in to one of the packets tonight for dinner and will have the other servings throughout the weekend because I am working all weekend. Good to come home to my own cooking but not have to cook after shift! Mini meal prep…

I also have a single friend that has a birthday this weekend that doesn’t have access to a good kitchen, and loves my cooking so I will take a bag filled with a generous serving of each to him.
